The environmental department protects the public’s health by ensuring safe food, facilities and practices. Kentucky has adopted the 2013 FDA Food Code and it contains information for opening up a retail food establishment.  All food establishments must have a Person in Charge (PIC) during all hours of operation that is certified through the Food Manager class.
